Meet 2017's Global Chef



We're just weeks away from welcoming this years global chef, Lionel Vandomme and having seen the menu delights, we're rather excited. Global Chef is coming to The Dock on March 14th and we have the low down right here for you...

Lionel Vandomme found a passion for food and cooking after seeing Paul Bocuse on TV and decided to become a chef when he was eight years old. Lionel would attend cookery class twice a week, where they would create the dish before eating it after. He attended a hotel and catering school in Lille obtaining qualifications in pastry, chocolate and confectionery making before partaking in another year to obtain qualifications as a butcher and caterer.

Lionel's cooking took him to the South of France, before enlisting in the military service at twenty two which took him to The National Residence of the Invalids before then going on to be employed as a chef at the French Ministry of Defence. 

Wanting a change, Lionel bought a pizzeria which he ran for five years and then a restaurant before taking a step back when children came along. In 1998, Lionel was hired by Sodexo and has been a regional trainer and restaurant manager ever since. 


The menu this year will be: 
  • French Onion Soup 
  • Pistou Soup (a vegetable & pesto bean soup)
  • Orange Duck with Gratin Dauphinois potatoes
  • Boeuf Bourguignon 
  • Clafouti de Tomate Sechees Courgette Feta et Basilic
  • Apple Clafoutis
  • Crème brulee
