Coming to The Dock on March 12th is Swedish chef, Daniel Leidstedt. Daniel is a restaurant manager at Restaurant City Hall in Gavle, Sweden. It has become a first choice for lunch and entertainment for both politicians and senior officials since 2004.
Daniel studied at the prestigious Sandvikens Restaurant School and then worked in several restaurants as a chef before joining Software Hotels in 1997,to start their restaurant and banqueting operations.
He regularly contributes to the menu committee for Sodexo Sweden as well as 'Nordic cooperation' which sees Norway, Denmark and Finland sharing best practise. During his career with Sodexo, Daniel has been nominated as a finalist for employee of the year in 2007 and his restaurant was a finalist for restaurant of the year in 2012.
Daniel's approach to work, is that you should be passionate about what you do, and to harness others' abilities, as well as knowing where your own strengths and weaknesses lie. During his time in England as the 2015 Global Chef, Daniel looks forward to showcasing a range of traditional Swedish cuisine including cured Char with Jerusalem Artichoke Cream,Trout Roe, Shiso Cress.
